Any recommendations on authentic kick-arse Texas BBQ joints?

Not sure of your interpretation of 'authentic', but we like Rudy's well enough.
Also, the BBQ truck in Ritter's parking lot (N. Fry) is quite good.

Take a 20 minute drive and go to The Swinging Door in Richmond.

Yeah they have ok bbq. Would recommend you go eat at Dekkers in Fulshear as well, not bbq, but they have an awesome grill where they use mesquite wood.
Also, if you are a beer fan there is World of Beers, and The Growler Spot in Fulshear.

Best place that would be closest to Katy is Brooks Place on Barker Cypress and 529. Rated one of the top 50 BBQ places in Texas.
