I like preparing a firm fish in foil with a couple pats of butter and Tony Chacheries. I prefer salmon or amberjack. Make sure the foil is sealed tight without air pockets.

Place on hot coals semi-buried for 15 minutes.

Delicious.

You could do the same thing with scallops, but skip the Tonys and add some salt and garlic powder.

A little lemon packet for after they’re removed from the coals won’t hurt either.

Just some forest service land in the Sumter National Forest here in South Carolina. Little spot I scouted out a few weeks back...finally cooled off enough to not be miserable overnight.
