1. Fill pot almost half way with water and light burner.
2. Add tub of Cajunland and 1/4 bottle of liquid boil.
3. Cut up sack of lemons and oranges. Squeeze into water.
4. Cut up onions and garlic. Add to pot.
5. Bring to rolling boil.
6. Add crawfish, sausage, mushrooms, potatoes.
7. Bring back to boil.
8. Test crawfish after minute or so. If they peel right, cut burner off. (At this point I hook up the Boil Boss and cool the pot down)
9. Add frozen corn, jar of minced garlic, and stick of butter.
10. Let sit for 30-45 mins.
11. Pull, drain, and pour on table.
12. Profit.

I cook my veggies and sausage separately.
100qt - 1 third full of water with a container of zats powder, 1 quart lemon concentrate, 6 lemons +-, small thing of liquid boil, and a couple bags of the crab seasoning bags. Bring to a boil and taste.... should burn your throat and be quite lemony. Keep a separate container of Zats, lemons, and crab boil bags for each batch after the veggies.
Start a timer for 30 minutes (hold at boil level on burner)
Add - potatoes, garlic, lemons, onions
at 15 minutes
Add - Sausage
At 10 minutes
Add Corn and mushrooms
AT 7 minutes
add cauliflower, brussel sprouts, green beans... stuff that cooks quickly
Remove once the timer is done and serve...
Add the other container of Zats, some more lemon juice, and the remaining few crab boil bags... bring to a boil
Add your sack of crawfish and bring to a boil.... Once boiling shut of the burner... let it sit for 20-30 minutes to taste... drink a few brews... tell a few lies... Serve.

Honestly, I don't have a great theory on why, but it's the way I've always done it.
