Gazpacho Recipes, Ideas, Etc

Blended one tonight with the last of my tomatoes....first run at this dish. I used:

Tomatoes
Red bell pepper
Green bell pepper
Red jalapeño
Red onion
Onion
Cucumber
Green onion
Garlic
Celery
Coriander
Salt
Black pepper
Red wine vinegar
A few slices of bread

I’ll chill overnight. Garnish with basil, croutons and EVOO.

Suggestions?

I suggest Light on the onion. Heavy on the evoo.

Pour everything into a bowl double lined with cheesecloth, tie up the open end, and suspend it over the bowl in the refrigerator overnight.

You can use this for cold soups or clear Bloody Marys.

Here's a quick video of the process. I guess if you wanted, you could make the tomato dashi like this guy.
