One lb beans, one medium onion diced, one tomato diced, chopped fresh basil, enough water to coer, one tsp salt. Thirty or so minutes of simmer, after boil.

Brown up some bacon/tasso/sausage (all or choose your favorite), saute onions, bell peppers, garlic, etc & smother the beans down in that. You can also add some potatoes & smother them down too.

I like my greens still crunchy so this is what I do:
Get a pan of water simmering then dump in the green beans for 3 minutes until bright green. When they turn bright green, dump them into a bowl of ice water to stop the cooking.
Saute some garlic with lemon and butter in the skillet and toss your greens back in when that's ready. Watch them until the first one starts to get a little brown around the edges or try them until they reach your desired doneness.

2 medium sized onions, chopped
1 small clove garlic, chopped
3 or 2 cups dry white wine
1 TBS. Lea & Perrins Worcestershire sauce
Louisiana hot sauce (cayenne)
