Fresh Andoille in gumbo

Chk and saus gumbo. Have some smoked regular sausage and fresh andoille (not smoked or cooked, raw).

Good or bad idea to put andoille in thisgumbo? If good idea would you recommend cooking first in pan etc before putting into gumbo?

You can cook it in the oven first to keep it from falling apart. Or brown it in the pot first and don't worry about it falling apart.

I would cook in down first to seperate the fat and throw it in there

Trust me on this, save that for something else, or smoke it yourself. It won't add the the rich smokey flavor you need for a good gumbo.

I've seen it sold like that, but I don't understand why. Few people have the equipment to smoke it properly, at below 160F so the fat doesn't start rendering.

Where did you buy your Andouille? Did you make it yourself?


If you bought it at a store or a smokehouse there's a 99% chance it's smoked. I don't know of any place that sells "uncooked" andouille. Basically andouille is the same thing as smoked sausage except it's in a bigger casing and they use use bigger grinder holes when grinding it. Otherwise the recipe is the same.
