re: Freezing shrimp or fish. Add water or not?

I vac seal both fish and shrimp. Freeze fish first. For shrimp I peel wash and vac seal. A neighbor and I bought shrimp from the same place and time. He froze in water and I vac. I ate both months later and couldn't tell the difference.
