For shrimp and crab boiling...

Do you take the skin off of your garlic and onions? Or just quarter the onions and smash the garlic bulbs to separate the cloves and chunk everything in skin on?

Don't use those. Boil crawfish in plain water and sprinkle seasoning after boiling

If you doing both at the same time, your most important question is how do I not overcook my shrimp, that is a common combo mistake

Agreed option. Lemons, onions, and garlic go with seasoning once the water starts to boil for me. Then after ~20 minutes (or a cold beer) the new potatoes go in. 10 minutes after that sausage goes in followed by shrooms 5 minutes later. Give shrooms about 5 minutes then shrimp gets a couple of minutes of boiling and a couple of minutes soaking.

Cut them in half between the root and stem and drop them in the pot.

Cut the onions in half leaving the root and top in place. Peel the first layer of skin and drop them in. They stay together better that way. Garlic pod - peel the paper, turn on it's side and cut in half leaving the root with a bunch of "halfs" connected. Drop it all in the pot. The bottom section will stay together for easy enjoyment. Just how I do it.

garlic i just throw in and the outer peel falls off on its own, for onions, half the onions only or they will fall apart on you quartered
