Food rescue advice needed

OK, here is what happened. I was going to make potato salad as usual. As eggs and potatoes were boiling I took the mixing bowl and added Mayo, Mustard and spices.

Then I took out a tupperware of raw chicken in a marinade to put on the grill. When I opened the lid it leaked marinade into the mixing bowl.

No way I'm gonna use Mayo mixed with raw chicken marinade. Contamination. Threw it out.

Problem...I have no more Mayo to make a new batch. The closest store is 10 miles away.

So, I've got 6 cooked red potatoes and 4 hard boiled eggs but no Mayo. What would you do with it?

handful of minced parsley

Blend all of the above together with a fork or a whisk and mix into the potatoes. Toss in the parsley and mix well.

German potato salad doesn't use mayo I don't think. Got any vinegar?

Throw the eggs in the fridge until you can get some mayo and make deviled eggs.

That's a good idea. I've got balsamic vinegar and mustard. I've made German potato salad before but never with hard boiled eggs. Thanks.

Exactly. Make it in the food processor or the blender. Nothing to it.

Or, if you don't want to make homemade mayo, just make a seasoned vinaigrette. Red potatoes are especially good in a vinaigrette style potato salad.
Mix 2 parts oil to 1 part vinegar, then add whole grain or dijon mustard, a pinch of sugar (or Steen's or maple syrup) salt, pepper, and whatever else you like: chopped chives, rosemary, shredded basil, dill, pickle relish, capers, etc.
