Pan fried in cast iron skillet with blackening seasoning
Jalapeno-cilantro slaw (Pioneer woman's recipe)
Fresh pico de gallo
Hot sauce of your choice

1/2 head Cabbage, Sliced Thin
1/2 head Purple Cabbage, Sliced Thin
1 whole Jalapeno, Halved Lengthwise And Thinly Sliced
1/2 c. Whole Milk
1/2 c. Mayonnaise
1 tsp. White Vinegar
1 Tbsp. Sugar
1/4 tsp. Salt
1/4 tsp. Cayenne Pepper
2 c. Cilantro Leaves, Barely Chopped

Slaw is very good on smoked pork as well.

Follow up. I wanted simple so I bought a bagged avocado ranch salad and the first ingredient was cabbage. That was pretty good for this and the wife and I ate it both on the tacos and on the side. I could not decide on any listed sauce, so I blended store bought guac, Mexican crema, mayo, and a red Mexican hot sauce. That was fantastic and I'll be doing that a lot in the future.

That’s the fun thing about tacos. You can make several versions all at once and see what you like best. That’s what I usually do with tacos.

Fry a piece, blacken a piece
Make a couple different sauces

Mix and match then you see what you like and don’t.
