Wow. A tiny bit over done for medium rare. But the tenderness and flavor!

Especially when dealing with steaks/chops, hit it on the cast iron at the end, not the grill. Put the cast iron on the grill if you need to in order to keep the mess outside. Get some crusty meat.

Based on what you posted, I don't see how it's done anything but medium rare. Beautiful table, and beautiful food. Congrats!

Next run, sous vide to temp and sear on a flat surface, flipping every 30 secs till you get the color you want.

For perfect medium rare steaks.

Salt and pepper the steak. I add some minced garlic and place in the vacuum bag.

Sous vide at 129f for 1.5-2 hours.

Remove the steak. Wipe dry with paper towels.

I use a cast iron skillet on the side burner of my gas grill and get the skillet as hot as possible. One minute on each side of the steam. Throw in some butter and let it melt and coat the steak with the butter.

All you are wanting to do with the cast iron skillet is get some color on both sides of the steak.

Looks fine. I don't know about that sauce on the steak.
