Finally Got Around to Doing Some Things

I meant to do this earlier this week but didn't make the time to. So this morning I got it done early.
We had some eggs leftovver from Easter Sunday so I decided to pickle them.
Vinegar and seasonings simmering.
Half gallon jar with about twenty eggs pickled! Ready to eat in about 4 days.
Also got around to making a batch of Pimento cheese. No, not because of the Masters. The wife loves this stuff as well as the rest of us here. Good stuff!!!!!

Cuban Liquor in Shreveport makes pecan pimento cheese that is like crack. They also bake fresh bread on Fridays. Today’s bread was caramelized onion and rosemary. Put them together, and you got a helluva good snack to start the weekend.

I love pimento cheese. I don’t know why I don’t make it myself how I like it.

Alright here it is.
I shred the cheeses from blocks at home myself.
8 oz. Sharp Cheddar
8 oz. Medium Cheddar(you could use all 16 oz. of just sharp cheddar too)
8 oz. Softened Cream Cheese(room temperature)
4 oz. Pepperjack cheese
4 oz. jar of diced pimentos(drained)
1 tsp. dehydrated chopped onion
1/2 tsp. granulated garlic
1/2 tsp granulated onion or onion powder
1/4 tsp. black pepper
1/4 tsp. salt (fine non-iodized preferably)
3/4 cup mayonnaise (you may add more or less depending on how you like it.
Put all ingredients in a large bowl. Here's where having the cream cheese room temperature softened is important. Using a hand mixer on low speed mix until all ingredients are thoroughly mixed. You may need a little more mayo to do this. Do not use higher than the lowest speed. The friction will ruin the mixture.
When well mixed put into a container with a lid and refrigerate for a few hours before serving.
