What places should I not leave Phoenix/Scottsdale without having tried? Are there any can't-miss restaurants? I'll be there for almost a week, so I have time to try a lot of places. Definitely looking more in the fast-casual price range, but might be able to afford a couple nice meals too.
I could also maybe use a rec for Sedona and Flagstaff.

Harvey's Wineburger - great burgers
Feeny's - old school restaurant
Carolina's (the original) - excellent Mexican
Chompie's - Jewish deli w/ breakfast menu as well
Durant's - steakhouse
Cornish Pasty - pasties, surprisingly very good
Hula's Modern Tiki
Richardson's - southwestern
Old Town Gringos in Scottsdale is the LSU bar
Camp Social is sometimes the LSU bar as well

This won't be helpful for what you want..or at all but's worth mentioning. I went to a bar in Scottsdale once that had the most hilarious special I've ever seen. It was called the RETOX special:
can of PBR, a shot of jameson, and a cigarette.

There’s a Whataburger right near ASU’s campus that I always go to. Of course, I’m from Chicago, so a bit less-frequent that I get to go.
