Fennel Dishes

My fennel plant has grown prodigiously this year. It's damn near as tall as me. I need some dish ideas to use this in. Open to anything.

I suggest googling for recipes. There's lot of them out there and many include using fennel in salads, braising, baking or adding it into other dishes to add that anise flavor fennel has.

Are you talking about just the fennel fronds, or do you have multiple plants and are harvesting the bulbs? Do you plan to let it flower & harvest pollen and/or seeds? Each part of the plant has different uses.

Fronds are mildest part in flavor. They're nice as an inclusion (chopped) in a salad, omelet, as a fresh garnish to add a little bright flavor.

Bulbs are delicious, sliced and eaten raw, esp in combination with citrus and black olives.

Pollen had its trendy moment a few years ago; big color punch, interesting but subtle flavor.

Seeds are most common, strongest/most concentrated flavor. If you let the plant flower & don't harvest all of the pollen, you will end up with seeds at the end of the growing season. You can collect & use dry, as well as replant for next year.

I haven't done anything to the plant. It's a single bulb that came back from last year. It's easily 5' tall. I was hoping to use the fronds for something. Maybe I'll let it go to seed and grab some of those, but my wife HATES fennel.

one of my favorite pizzas had fennel on it

it was similar to this one using prosciutto and apples
