Fat cap up. Fat will melt into the meat as it renders. Rub should be 45% of salt and 45% pepper and 10% coffee. GOAT

Yep, because he uses offset smokers. As weskarl mentioned, fat toward the heat. I think Franklin also recommends point toward the heat & flat away. Which means point towards firebox on an offset.

It is my fault. I wanted the opinions of the FBD Krewe and I tried to mix it in with beer drinking.
I am done with beer for the night, but I plan to have a pour of brown to end the night.

Fat cap always up, it makes the fat (flavor) drizzle down into the meat.
Just coat with liberal salt and pepper for your 1st go.
An hour and 20 minutes per pound. At 220 degrees, Let rest for 30 minutes after removing from smoker.
