I finally got my negative test, so yeah I can meet up for a lunch stop.
There's one great spot in Knoxville to stock up, McScrooge's right off of I-40/I-75 which you will go right by. Also Bearden Beer Garden which is also not out of your way and they should open at 10. They sell on premise as well and brew their own beer, but no food. Total Wine as well is really a can't go wrong option, but I like to support local when I can.
Unforunately most breweries don't open until 3 or 4 on Wednesdays. Balter Beerworks (brewpub) will open... but their beer is mediocre. Blackhorse will be open downtown, great food but just okay beer. Orange Hat is one brewery that will be open, very good beer, and maybe a food truck. Not very convenient to my office though.
Worst case I can pick up some Gus's Fried Chicken and meet you at Bearden Beer Garden.
If you go the Nashville route, I'd say Bearded Iris and Southern Grist are your two obvious options, and both open at 11 or 12 every day, so you'll have better luck with timing.

I think it's great!! The hops aren't too pronounced and it drinks easy. Glad I have a few to crush over this weekend.
