I love twice baked potatoes.
Bake at 400 for an hour. Then let it cool for 15 minutes or until you can handle them. Cut the tops off and scoop most of the potato out of the skin.
Mix in some real bacon bits, butter, cheese, salt/pepper/garlic powder and sour cream (and anything else you like). Then restuff the potatoes. Top with more cheese.
If I'm making 3 or 4 potatoes for people, I will usually bake one extra. I'll cut the extra one into 1/4s then scoop out the potato. Whatever doesn't fit inside the shells gets added to these skin pieces (4 from the extra potato and 3 or 4 quarters from the origianl potatoes). Makes some great potato skins.

Wrap in foil, bake for an hour at 400 deg., remove from oven... wait 24 hours and place back in 400 deg. oven for an hour.
Thats MY way... so, to answer the OP... 26 hours is the fastest time to bake a potato!

this is what I do and you can't tell the difference from cooking it completely in the oven.

Is that some sort of Alabama thing? What's the purpose of doing it? Does it make the potato better in some way?

Wrap it in tinfoil and throw it in micrwave. 5 minutes each side if you live that long.
