Anyone have a good recipe for an eggplant lasagna that’s low carb?

slice the eggplant into thin planks like a lasagne noodle and roast
build lasagne the same way you would normally using the eggplant instead of noodles
I like to use goat cheese instead of ricotta in a veg lasagne and also a bit of pesto

Just made this a couple days ago. Make sure to pre-bake the eggplant or it will be mushy.

Wife and I cooked moussaka today . Very rich with lots of flavor . I enjoyed it .
