2 sticks of butter (salted is fine)
2 cups sugar
1/2 cup cocoa (high-quailty; Guittard, Valrhona, Droste, the fair trade stuff from Costco)
4 eggs
2 tsp vanilla
1.5 cups of flour
1 cup pecans, chopped (optional)
1. Line a 9x13 cake pan with foil or parchment (or grease & flour it).
2. Heat oven to 350 degrees.
3. In a medium saucepan, melt the two sticks of butter (just melted, not bubbling or frothing). Remove pan from heat, and stir in the sugar (use a wooden spoon or a stiff silicone spatula/spoon). Stir in the cocoa powder. Keep stirring until there are no lumps, and the mixture is cooled suifficiently that you can stick a finger in without burning yourself.
4. Add the vanilla and the eggs, all at once. Stir, stir, stir until the eggs are all evenly incorporated, then stir in the flour. Once flour is mixed in, add the nuts if using.
5. Spread the batter into the prepped pan. Bake at 350 for 25 minutes.
6. Cool slightly before cutting.
Sometimes, I sprinkle the nuts on top, along with a healthy sprinkle of coarse sea salt and some dark chocolate chips. Or a mix of flaked almonds and big-flake coconut on top...This is a slightly cakey brownie, rather than a dense, fudge one. It is good as the base for a brownie sundae, or diced small to mix into homemade ice cream.
