Dumb question bout frying turkey thermometer

I have a digital wired meat thermometer that I use for cooking briskets and sausage. Stabbed it in turkey and dropped turkey in oil. Immediately came up to 175 and was still coming up. I pulled it out. Should I pull the turkey after about 45 and insert to check? Seems like the oil penetrates and immediately drives the thermo internal temp up.

Yes. Cook 3.5 minutes per pound at 350 degrees. When your time is up, pull the turkey out and check. If the temp isn’t right, drop it back in for a few minutes.
Also, next time you’re at the store, pick up a real thermometer. You can get one for cheap.
