The Portland alumni group has volunteers do everything and they purge the 700-800 pounds they do every year.

As a general rule, I avoid anything that puts hair on my chest. But, thanks for the info.
btw: SoCal Alumni crawfish boil is 5/19 if anyone is interested or is going to be in the area that day. We're having it in Long Beach this year.

LSU Ag Center says the salt doesn't do anything:

You should just do a wash. A full purge takes 24 hours in an aerated water bath per the same site.

But the chlorine in the water will kill some of the crawfish. Better to just peel off the vein.

We've had the same caterer for the past 10 years or so. They do a great job and take responsibility for everything. Came in very handy the year our crawfish didn't make their connection in Atlanta.

The salt purge is supposed to be for about the last 5 minutes before you drop them in the boil.

Salt doesn't purge crawfish

You need minimum 24 hours to purge a crawfish

No. I wash/rinse them until the water is clear, but "purging" is a myth.

So why are they still full of shite when you take them out of salt water? Putting them in salt does nothing.

I pretty sure that the South Perkins Market Cafe' doesn't purge them or purges them poorly.

I ate there the other day for the all-you-can-eat crawfish and there was a ton of grass on them. Had a muddy, poopy taste to them too. And they weren't spicy enough. By comparison, I ate crawfish at Sammy's the week before and they were perfect; zero grass, zero mud, beautiful red color, and plenty spicy.
