I've used a sharp paring knife to slit the back of the shell on big shrimp before BBQing. Slip the knife under the shell and zip, it's done.

Did not bother to de-vein. Just slit the shell in an effort to get a little more seasoning in with the shrimp and maybe make it easier to peel. Not sure if it worked any better, but it was easy enough.

Nice idea. I've never felt the sauce didn't seep into the shell, but yours probably get more sauce.
