Duo for brunch
El Noa Noa for kickass Mexican
Highland Tavern for the best bar food.
Sushi Den or Osaka for ramen and sushi.
Rioja for fancy
Linger for great food and patio/balcony dining.
Honestly, Denver is full of great restaurants

Stay somewhere downtown. It's a very walkable downtown area so I'd prefer to stay there. I've stayed at a Courtyard Marriott right on 16th that was nice. I've also stayed at a very nice Hampton Inn by the convention center. I'd recommend either one.
Check out Euclid Hall for dinner one night. I really enjoyed that place. Like someone else said, tons of great restaurants downtown.

This is lowbrow, but I had a great breakfast burrito at the Denver Diner back in 2008. It was legitimately one of the best things I've ever eaten.

Ted's Montana Grill was quite good when I was there a few years ago. And with 7-8 locations in and around Denver, you'll probably be relatively close to one.
I had the bison chili and the bison burger.

Snooze for breakfast/brunch
Osteria Marco is my favorite restaurant (that I've been to) in Denver.
