It's the best way to judge a pizza place. Sometimes too many toppings will make for floppy crust, uneven cook, etc.. and you might be disappointed in a place that otherwise has good pizza (that was Rocca for me, the first time I went I had a pizza with too many toppings and it was so floppy it felt undercooked). If a pizza place can't get a simple cheese pizza to not be super floppy, have a nice bite, and taste good then they're really off the mark. A margherita is also a great pizza to judge a place by for similar reasons, plus it requires quality ingredients to be great. I'm not a pizza expert by any means, but that's been my experience.

Speaking of, Natchez Brewing has really damn good pizza if you every find yourself out that way.

reviewing strictly cheese pizza's is exactly the way to do pizza reviews.

Red Zeppelin makes there large and medium pizza dough in house. They buy the small and the cauliflower crust already made.
