I do this often. One of my favorite things is to have my family pick a country, then I'll research a few popular dishes from that country and try to find good recipes and make them as authentically as I can with ingredient limitations/substitutions. We often find ourselves saying "that's really good, but we have no idea if it is supposed to taste like that."

Y'all have encouraged me to make a Cioppino in the next couple of weeks. Based on the ingredients, I may need to be really authentic with it and go beg for some seafood.
