He wants to know what the orange stuff is on the outside of crunchy rolls. Nothing said about crunchy stuff.

he described it as a dried seasoning...you think anyone could think roe was a dried seasoning?

tempura is golden brown (as most things fried should be), which could definitely be described as orange

so i am going with the more likely here....and it is more likely that tempura can be called orange than roe be called a dried seasoning

I don't think anyone would call fired batter bits orange...unless they're color blind. He may have mistaken roe for something dried. It doesn't really have a distinctively wet mouthfeel. Still, I see where you're coming from. It's just hard for me to think that anyone would have trouble determining what fried bits of batter are. Masago is not as common a food item.

i mean, a light brown is probably a better description and a golden brown is probably the best description, but how different are orange and golden brown?

thats like saying purple could not be desribed as a reddish blue

to me, that mistake seems alot more likely that saying smelt roe was a dried seasoning

the only way we find out is it he comes back and settles this, and if he really thinks roe was a dried seasoning, i hope i never eat the sushi he makes

I still think he is talking about roe. when it is on a roll it is kinda dry looking but sticky to the touch.

Whew. Didn't mean to cause all this confusion.

Further investigation may be warranted on my part because I was simply asking what makes crunchy rolls crunchy. I did not ask about any certain color. So it seems the answer is either smelt roe or tempura. Both could be right. I don't know. If anyone has made some rolls at home (as I have) and can answer this question let me know. Also, if you know where the particular item in question can be purchase it would be nice to know that too.

Thanks all for the input.

Looks like you were asking about a particular ingredient. Was it a bright orange or something that looks like bread crumbs in color?

simply cannot answer this question right now. I seem to remember crunchy texture on a couple of different rolls that I have ordered in the past. For sure the LSU roll has a crunchy texture and I don't remember any orange texture. But I have ordered rolls with an orange colored "topping".

Little orange balls that stick to the rice = roe (fish eggs)

crunchy brownish flakes that don't stick well to the rice = tempura

brown sauce that is drizzled on the crunchy roll pictured = eel sauce
