Believe it or not, in my oven, with my cast iron skillets, at 400 degrees, the crusty bottom gets too brown before the top browns properly.

I should have said 375 - 395.

Better?

I like Great Northern Beans (white beans) this way, too.

I do like rice, though. With red beans and sometimes with chili.

Here is red beans with no rice.

That cornbread is skillet fried - like a pancake. Really good way to cook cornbread too.

Actually my BP is well inside normal range.

Like 105/78

Not bad for an old fart!

Of course I take Beta Blockers for my St Jude heart (mitral) valve.

I have the best cholesterol and BP that money can buy. Strong constant heart beat thanks to a Medtronics Pace Maker. I figure they will need to put a bullet through my pacemaker to kill me.

Maybe a strong whack with a baseball bat will accomplish the same objective. Hard to say. the pacemaker is in a pocket right under the skin so it's not very well protected. They did take pains to position it away from where the butt of my shotgun rests when I shoot. Kick from a Win Mag still worries me though.

Just curious - what made you assume I had hypertension?

Yeah, you blew it with the vienna sausages and boiled peanuts! That doesn't even count for prison food!

That post was done out of respect for Skillet - He is a revered part of the old guard of F&DB and one who has my respect.

Besides, Vienna Sausages are Good Eats!

And I fixed the post so that it works now

The peanuts were a gift from someone and they are still somewhere in the cabinet. If you like, I could try to find them and mail them to you, as I prefer to cook mine from scratch.

I try to limit my boiled peanut consumption to the fall, somewhere around the third or forth high school football game time of the year, when I can cook them from green peanuts obtained at the Piggly Wiggly and sit in the bleachers on a Friday night to eat them. The oldest Grandson is a star football (offensive lineman) player in the great tradition of my family and I get a lot of pleasure doing that.

Regarding green vs dried peanuts that are boiled, I can detect a difference in green peanut boiled peanuts and boiled peanuts that start from dried peanuts and prefer the green peanut boiled peanut taste.

And some would tell you my culinary views are not all that sophisticated!
