Crawfish sauce Recipe?

Best crawfish sauce recipe to smother fish, chicken or pork chop with?

Personally, I've never understood this concept and don't care for it. That being said, most of the time I see crawfish etouffee used for this purpose. It seems to be poured over everything from steak to fish.
You could also make a cardinale which is delicious. The Plantation Cookbook recipe is very good and it's in the TD cookbook.
