Crawfish sauce Recipe?

Personally, I've never understood this concept and don't care for it. That being said, most of the time I see crawfish etouffee used for this purpose. It seems to be poured over everything from steak to fish.

You could also make a cardinale which is delicious. The Plantation Cookbook recipe is very good and it's in the TD cookbook.

I don't know. A lot of the ones I've seen seem to be cream-based. And I love a crawfish sauce over seafood or veal. I'm not sure about it over other beef, though.
