Crawfish etoufee plus fried crawfish tails

Made a nice etoufee using John Folse recipe. This is very good on its own.
I got an extra lb of crawfish for a little lagniappe. Milk/egg/mustard wash, dredged in store brand fish fry, deep fried.
These crispy little nuggets were delicious on their own, and added a nice little texture pop to the etoufee.
Would recommend.

Never saw the appeal of fried crawfish. You’re essentially cooking them twice

Edit: unless you’re frying them raw. Do u see anyone frying boiled shrimp

People fry everything. I remember when At the state fair they were selling fried snicker bars lol

Fried crawfish are the best. But as previous poster said, you gotta peel em uncooked. That and a light, light batter of 50/50 meal and flour, salt and pepper. Delicous, heavy batter, or cooking cooked ones, not as good.

The peeled crawfish tails you buy are only partially cooked so they fry good and frying the ones after a boil is no different than frying crab fingers, just a light dusting and a flash fry to cook the breading and warm the product, it is all good

You’re right. They’re not good, they’re scrumptious.

Keeping the egg/water mixture icy cold is key when prepping to fry. It’s been a minute since I’ve fried them, but back in the day it was my husband’s favorite way to eat crawfish. Now it’s boiled. I’ve never fried “after the boil” crawfish.
