Crawfish and corn soup... recipe??

anyone have a solid recipe for this? I've had it before and can't find a sure fire good recipe now.

I've done this one many times and it was very good. I'm not sure if turning it into "Crawfish & Corn Soup" would be a simple as substituting crawfish for the shrimp.


Shrimp and Corn Soup

1 tbsp. Butter or margarine
¼ cup Chopped green onions
1 clove Minced garlic
1/8 tsp. Black pepper
2 cans Cream of potato soup
2 cups Milk
3 oz. Cream cheese (softened)
8-3/4 oz. can Whole kernel corn
½ lb. Shrimp

Melt butter/margarine in a large dutch oven
Add green onions, garlic and black pepper and saute’ until onions and garlic are tender
Stir in soup, milk, softened cream cheese and corn
Bring to a boil (stirring occasionally)
Add shrimp
Cover and reduce heat
Cook 5-7 minutes

that one looks good alright plus you can check the louisiana cooking magazine web site as well

EASY CRAWFISH-CORN SOUP
2tbls. oil, butter or marg.
1 med onion chopped
1 lb peeled crawfish tails
1 10 oz can diced Ro-tel tomatoes
2 ( 10 1/2 oz) cans potato soup
2 17 oz cans cream style corn
2 17 oz. cans whole kernel corn
1 1/2 cups half and half
3 tbles chopped fresh parsley
3 tbls. chopped green onion
1. in large, heavy pot heat oil/butter/or marg. and saute onion till tender.
2. Add crawfish and cook 3 min.
3. Add tomatoes, potato coup corn and half & half.
4. Simmer over low heat for about 10 min.
5. Add parsley and green onions.

Check the recipe book for my recipe for crabmeat and corn. Crawfish works just as well. Mr Balls can attest to the recipe. It's gotten him some hunting weekends from his wife when he makes it.
