Not sure if this qualifies as a true bisque but I saw this shared on facebook. It's a recipe from the advocate. Had a little over a pound of tails from a few weeks ago.

Few comments on recipe. I modified to make it slightly more keto friendly. Instead of 1/2 cup of flour, I made it 1/4 cup of flour and 1/4 cup of almond flour. I used 1 cup of heavy cream instead of 3 cups of half and half. I also added a cup of water to fill in for 1 cup of half and half. I didn't want to cut it any thinner so I stopped.
Finally, there is no mention of any sort of spice in that recipe which is curious. I added: salt/black pepper/paprika/cayenne/cajun seasoning to taste.

That's from a charity event we have in Zachary every year - a chili cook off. I think we got honorable mention that year and got that wooden spoon. The event is sort of funny to me because some businesses will hire professional chefs instead of doing it themselves which is the spirit of the thing.
