"bake at 350F for 15 minutes" sound about right? Should I put a little water in the pan and cover them or just go dry and naked?

thanks guys.

Mix cream cheese with the stuffing and they won't dry out. The time sounds fine.

I would rather rub just a little butter or oil on the outside of the caps than add water. IMO you are trying to get rid of water and not add it.

This. I did some stuffed portabella mushrooms a while back with cream cheese, spicy sausage, shredded cheese, onion, and BBQ rub, and threw them in the smoker...came out awesome. Unfortunately don't have an after pic, but this is the before.

I love portabellas. I’m going to have to try this recipe. I mostly just marinade them and cook on pit when I do with my steaks, but this sounds amazing.

I thought they'd be too smoky, but they weren't. I did make the mistake of trying to finish them on the grill and it literally flattened the mushrooms because of the heat, but they were still really tasty.
