Cooking Jambalaya a lil Early

Have some people coming over for the weekend. Doing a pork and sausage jambalaya the Stadium Rat way as always. Wanna cook it early and put it in a large electric roster to keep it warm. Will it dry out?

A pot of jambalaya will stay hot for a long time in a cast iron pot. I’d have no issues cooking it and letting it sit in the pot for an hour.

Leave it in the pot, lid on.
When its done, turn it over once, and don't mess with it again until everyone eats.
When the top cools off, turn it over again.
It should stay warm for a couple of hours.

Well that answer threw me! That’s not early. But yeah, it will keep warm in the pot for 5 hours no problem.
