Cooking Indian cuisine

I have never cooked Indian cuisine and was wondering what are some dishes to start with. My local Kroger has a really good variety of jarred Indian sauces and bases. How are these. Any that you would recommend?

Butter chicken is one of the easier items to start off with. Maybe some Lamb or Chicken Masala. Use the thickest yogurt you can find. I get all my spices from a local Indian grocery. The spices come pre-mixed for $1/package. One package will last me 3-4 meals worth.

Also, homemade Naan to go with your main dish is pretty easy to do as well.

The trick with basmati rice is to let it soak for a half hour before your cook it and then rinse it a few times. I don't steam basmati; I boil it in 4 parts water to one part rice.

Is it Patak's? If so, see if they have the Vindaloo curry. I use this one to make chicken curry, and it's pretty good.

frick that. make your own sauce. may take a few times but once you get it right it will taste that much better.

just look up some different recipes online and try one out. couple of suggestions from me.. go easy on the paprika. marinate your meat for at least a couple of hours. use fresh red chili peppers.

You can find really good prices on bulk spices there as well as a variety of other things. Their saffron sucks though

In addition to the aforementioned International Market, Whole Foods on Vets/Severn carries it. BUT, it is hideously expensive at WF (like $8 a package). It's pretty easy to make at home, here's a recipe w/video:

Google garam masala, learn what is in it, and how to construct a version of it to fit your own taste. One thing to be aware of is that countries near the equator have diets/cookinng methods that take into account spoilage pre-refrigeration days. If you think Cajun is hot and spicy, you are in for a surprise. I was many years ago critiqued by an Indian chef in NOLA, he asked why it wasn't hotter, and that stuff would have worked as a paint remover.

Chicken Marsala and Spinach chicken are good starters and I know the store next to Matherne's on Highland has a lot of indian spices and that is where I went when I lived in BR.

If you're looking for a place in Baton Rouge they have Fashion India where you can score plenty of spices as well as paneer cheese and they also have a lot of the packets/sauces if you don't feel like doing from scratch.

You mean masala not marsala...that's Italian

Anyway one of the things I like about fashion India is they have whole garam masala in a bag so you just have to toast it and grind it instead of portioning out all of the spices ahead of time.

TA claims that Saffron NOLA on the wank is great but it's only open Friday nights

Taj Mahal is probably the best in the area
