What is the reason some people say you should not make a roux in a black iron pot?

Because they are retarded.

Everytime I use mine, after washing good and drying well over heat I rub a lite coat of oil and reheat the pot good (this opens the pours) and let it cool down slowly.

shane "krazy kajun" told me to use mineral oil. it is the only oil that won't get rancid. most butcher shops use this on their equipment.

Roux OK, never use okra in cast iron, it will turn everything gray. Please don't argue, I have paid the price for this error.

Mineral oil is also used as a laxative. Not sure if I am willing to risk that. Talk about screw up a tailgate. Better buy one of these:

yes, but just put a light coating on your black iron. then before you use it, let it get hot and most will burn off. i bet its better for you than rancid cooking oil.
