Cabbage is cheap and we are planning some pulled pork tacos.

1/2 cup oil
1/3 cup apple cider or red wine vinegar
1/4 cup sugar
1 TBS dijon mustard
1 TBS honey
Salt and Pepper to taste

Add a little grated onion too. Maybe a tablespoon?
I make vinegar coleslaw from time to time. Except I don't think I use oil. More just vinegar, salt, pepper, celery seed and onion.
Pro tip - cut up your cabbage, put it in a colander over a bowl, put a little salt and sugar on the cabbage and let it sit for 30 minutes or so. It will draw out some of the water.
