Cleaning/Cooking White Perch/Sac au lait/Crappie??

I recently found a nice fishing spot with a great white perch (as known around these parts) bite. I'm looking for any advice on how the FDB handles these fish. I've filleted some of them, but I'm slow and lose a lot of meat, but they sure do fry up real nice. I've scaled/headed/tailed/gutted a few of them and fried them whole. Presentation is great, but, especially with kids, the eating is a lot tougher.
Tips tricks, what to do with large ones, small ones, cleaning tools and techniques, cooking options, all will be appreciated. Thanks FDB.

Filet and fry, Sax Aux Lait is my favorite fish for that. Good old Dexter-Russel 6" filet knife does the job filetting them. They are also good blackened but you have to watch because the cook very quickly.

Don't filet. Scale, head, gut. Clip the small fins on either side, but leave the large dorsal, ventral, and tail fin on. Drench in your favorite milk and egg based drench and then bread in your favorite cornmeal/flour based dredge and fry whole. Pull the dorsal and ventral fins away once they're cooked and you can slide a fork between the slabs of meat on either side of the fish and the ribs; the meat will just come off the ribs in delicious chunks and you won't have lost any to filleting. The tail fin is like a heavenly crispy fish potato chip if you fry it right. This goes pretty much for all types of panfish.
If you've never had panfish that look like this when it's time to eat, you're missing out on one of the best ways to eat that fish, if not the absolute best.
Dammit, now I want about a dozen of those fried up in front of me right now.
