1. Cube before, during or after smoke?
I’ve seen recipes for all.
2. I’d like to cube first as I think it’ll cook faster but does it get the desired effect?
3. Also, can I keep them in a pan if cubed to start or straight on grate?

As stated whole can take awhile, cube much quicker plus more crisp burnt ends, watch chuds bbq video

I like to cube first… makes for better bark on all sides

I smoke whole until 185 deg, then cube, dust, sauce ...back on smoker until 205 deg.
