Sitting here eating some French fries and po boy at chimes


Anyone know what they do to make the fries so crunchy

I think these are probably the best fries ever

Blanch first, let cool to room temp, then fry.

Of all the things I can think to say about the Chimes, complimenting their French fries aint one of em.

FWIW Porch Light Grill has them exact same fries. Deliciousness particularly when used for Loaded Cheese Fries.

Chimes works cheese fries were the shite until they replaced the big chunks of bacon with bacon bits

Specifically curious on how they get the extra crunch
Lot of ways to enhance with sauces etc

I'm betting they get them off the distributor truck like that. They don't appear to be fresh-cut. But hell, I prefer them over some places' fresh-cut fries.
Georges in particular are small and soggy.

Haha They will get staffing up to speed in no time. It's doing wayyy to well not to pay good kitchen folks to jump ship. It's well-run but definitely understaffed in the "back of house" for now.
