Chicken crust pizza

I'm always on the look out for good low carb recipes, and saw this one for chicken crust pizza. It had great reviews so I thought I'd try it.
One pound ground chicken
1/4 cup shredded mozzarella
1/4 cup Parmesan
Italian herbs
Mix together and spread out on parchment paper on pizza pan. Bake at 400 for 20 minutes.
Came out looking like this:
I topped it with mushrooms and sausage and onions (all of which I pre-cooked) and mozzarella and baked for 10 more min:
Sliced and plated:
I don't think I'll do this again. Sure, it was low carb, but it certainly didn't taste like pizza crust. Tastes like chicken!!

Obvioulsy it tasted like chicken.. was it good though? It sounds good to me.
You can try doing this with cauliflower. Plenty of recipes out there.

Don't. The recipe I followed called for microwaving cauliflower until it was soft enough to be put into a food processor, then microwaved some more. My house stunk like cauliflower for 3 days. And the pizza wasn't that good.

This is interesting! I don't care for chicken enough to try, but it was fun to see how yours turned out.
I'm pretty curious about Lou Malnati's sausage crust pizza. I haven't brought myself to order one yet.

Ha! I like cauliflower crust pizza. Haven't had the stinky house issue. It usually dissipates faster than cooking bacon does.

It was fine. I didn't love it.
Yeah, I know all about cauliflower crust pizza. I've had some success with it, but neither of these compares to fathead pizza crust, which does have some carbs. I just need to accept the fact that pizza (even with fathead dough) should be something I have only every once in a while.

How's it coming along? You have stuck to low carb seemingly perfectly for a pretty long time. That's impressive.
I do pizza on pita bread once or twice a week when I have the calorie room for it (I can do two for just under 500cals). Pizza is just so darn good!

Seemingly perfectly ... well, at least according to the pics I post. Sigh. I stick to low carb for long periods and then when I break, it's not pretty.
