Chargrilled oysters tonight

ordered 100 oysters the other day from Grand Isle Farms after a recommendation from here. They delivered this afternoon They weren't the biggest I've ever gotten but they were meaty and delicious.






Didn't plate, just ate out of the tray on the patio.

Yeah, I usually do but wasn't running to the store for a couple lemons.

My recipe is pretty simple, again I don't measure anything other than water and rice.

butter
lemon juice
a lot of pressed garlic
Worcestershire to taste (i put a dash or 2)
cajun seasoning (I like the Cajun moon seafood)
salt
white pepper
Put all that in a pot and let it simmer

shred a wedge of Parmesan and mix that with some chopped parsley and set aside. I also put a small piece of mozzarella on some of these and it was pretty darn good.

Get the pit 400-500 and start laying oysters on (go ahead and throw the mozzarella on now if you are using it).
Keep them wet with the butter mixture while they cook but don't drown them. I cook by sight but usually 5 minutes is good. It really depends on how you want them, more raw or more done. My mississippi wife likes them more well done, I like them just warmed.
Pull them and drizzle with butter again before sprinkling the Parmesan and parsley on them.
Eat with a good crusty french bread.

Pro tip: So I forgot they were going to be delivered today. I had a tub of crab meat in the freezer that I forgot to thaw. If you put a chunk of crab meat in with the oyster while they cook, it brings it to another level.

ETA you will notice I flipped the grate to the front after I burned the crap out of my hands reaching across the coals like a dumbass

Thanks.
Grill has been there for over a year with no issue.
I don't want it out in the weather either.
