I have really been wanting to build a custom cedar smokehouse and most other online forums are much slower than here so I figured I would ask if any of you have built one. Planning to use a wood burning stove and pipe into bottom of smoke house vs building a complete masonry fire box as this seems like a quicker and cheaper option. Thinking of basing footprint off of full size baking pans. Will have some dowels for sausage at the top etc. Concrete floor with cinderblock lower. Would love any input ya'll may have.

I don’t have one, but have wanted to build one for quite some time. I don’t have anywhere to hide one in the backyard unfortunately.
Keep us updated. Would love to follow your progress.

Will do. I have a bathroom project to finish at the moment but hoping to tackle the smoke house after that. Not sure if the wife will agree to this being incorporated into the back deck so it may end up getting done at my hunting property down the road.

I was going to recommend SMIKINGMEATFORUMS but I see you already went there. Good folks there willing to share their knowledge.
I built a small propane fueled smoker a few years back. I use it a lot...just finishing today the last of a case of pork bellies I bought.
As far as drippings I use an aluminum roasting pan.

I watched several videos on YouTube last year about smoking and salt curing hams. Several videos on there about building smokehouses or at least what to think about. I'll link them here if I can find them again.
