Hot sauce and/or mustard for sardines are everywhere. Olive oil are readily available online. I think the brand is Mastis. Lots of good options. With chiles, tomatoes, lemon, etc.

Haven’t had as much luck with oysters without paying more than fresh oysters.

Grocery stores around me offer plenty of options. Where are you?

I haven't looked lately, but I've never had an issue finding sardines in olive oil in the grocery stores. The smoked oysters are good too, on occasion.

Anyone had Portuguese-style grilled sardines? I haven't, but they are a big thing over there.
