Yes.

The fat will run and will self baste the meat as it goes. Otherwise you will have to constantly brush the meat with a mop to keep it from drying out.

Another recommendation is to put a tray under the meat to collect drippings, and in the last hour or two to throw in potatoes, onions, etc in there.

And I would say 8-10 hours.

One thing you will learn about smokers:

It is possible to overdo it on the smoke flavor.


Depending on what the dripping pan looks like, you might want to throw in water as well fwiw.

Oh, shite. Yea, this is definitely going to be interesting. Hopefully my guinea pigs will be liquored up by the time they get to taste it.

Trim off some of the hard fat, skim the top layer of fat, but leave most of it. Rub the hell out of it with this on it and let it sit over night


Then have your smoker ready to go for about 3-4 am, cause you need to smoke it at 225 for 1.5 hrs/lb. You can foil it after about 6-7 hours...Should be ready for dinner.
