Roast? NO! ~~ Braise? YES! Personally, I don't particularly care for it. However, people do it(braise) all the time with butts, ribs, and briskets....whether in a crock pot, or wrapped in foil. butcher paper and the like.

I sear it in olive oil heavily seasoned to get a good crust. Throw in the crock pot with a can of Hatch Chilies and a can of pineapple juice. Cook on low for 8-10 hours. Tastes phenomenal.
