I have a few giant packs of boneless skinless thighs from Costco in my freezer.

Can I just throw them on my Big Green Egg frozen? Maybe set up for indirect heat with a pan to catch the melting water and let them go until cooked?

Anyone ever do this?

If not, what's the go-to method for defrosting these big packs of chicken? I never really freeze and then thaw raw meat.

I would defrost them. Run slightly warm water over them or submerge them in water.

Are the frozen individually? If so You can thaw the whole bag it in the fridge over night, then run cold water over them a minute.

Unfortunately no. They're in the vaccusealed bags from Costco.

I read nothing but warnings and death stories when googling how to defrost chicken.

If you put them on frozen the texture will be off by the time they completely cook.

I did that one time with some from Costco and they was overly chewy.

Don’t grill frozen chicken.

In the sealed plastic, defrost them by running like warm water over the package until defrosted.

Then season and grill

Only thing I’ve thrown on the grill frozen has been sausage. Takes maybe an extra 5-10 minutes. Not sure about chicken. Would be hard to season frozen.

No—the outside of the chicken brick will be overdone while the interior is still below a god safe (or tasty) temp. Just put the big bag in the fridge the day before you want to use it, then defrost the rest of the way under running water.

Thaw them in the bag sous vide and then season and finish off on the smoker.
