I used about 7 cups of flour and nearly 6 of oil this time that I used to fry all the chicken. It was something like that. I'm not really good at measuring. I use a big deep cast iron fryer to make the roux, so I sort of know how much oil and add the flour until I get the texture I want when I whisk it together. I've made it so many times that I just sort of do it. I'd rather have more than I need than less, but I used it all.
I didn't make 5 gallons of roux!!!

Just did the Paul P gumbo coating and frying the chicken like that...loved it. Used his meat magic in it for the first time too and enjoyed it.
