Its not dangerous. I do it every time. Only have like two or 3 hand scars from roux and thats from whisking in a really deep pot

Have you tried microwaving the roux? Much faster and easier.

You could have scorched it while cooking the gumbo. If you bring to a boil or high heat and aren’t stirring it will settle a bit and then if you scrape the bottom this will ruin it.
