Brisket Point Burnt Ends

I purchased a twin pack of brisket points (about 3.5 lbs each) I was going to smoke them to 190, then cube them up until 205. At 225, how much time should I account for?

Each piece of meat is going to smoke differently, I would account for probably 10 hours or so.

Last time I had one big one at like 6-8 lbs and it took 6 hours total

That's what I would account for because it's going to be a crap shoot. I'd much rather finish earlier than too late.

ETA: I'm always conservative in regards to timing when I'm cooking brisket, because I can just store it wrapped in an ice chest and it will hold for a long time if I finish early.

They have whole briskets and then they do sell points and flats separately. Thought it was pretty neat

Just start smoking low and slow and then start checking at 190-195

Need to have a thermometer in each point

If you are wrapping wrap when you see an established bark

Time is hard to gauge, but only 3.5 lbs each won’t be all day. Lol

Probably in the 5-8 hour range. If you finish a little early just let it rest longer.

Just found this

Place brisket on the grill grate and cook until the internal temperature reaches 190? (approximately 6 to 7 hours). Remove brisket from grill and cut into 1 inch cubes.


Toss brisket cubes with sauce mixture in a pan and cover the pan with aluminum foil. Place pan in grill and cook for 1 hour.

Temp was 250 for a 4-6 pound point

Sauce mixture consisted of beef broth and rub?

Never did just a point so maybe a wrap doesn’t even come into play?
