Just got a recteq 590 and want to do a brisket soon. Watched a few YouTube vids and they were saying not to set it directly on the grates and have it on an upper shelf.
Is that true? The raised shelf recteq offers for my grill isn’t big enough for a brisket, at least I don’t think. Am I overthinking this? Am I an idiot? I’m thinking yes to the latter

there is only one shelf. You will be fine. Use your normal technique.

Rectec 340 and a Bullseye here, slap it fat cap down on the grates and smoke the shite out of it.

If I'm feeling frisky I'll throw the trimmings in a shallow foil pan and put under grate on the drip tray. That helps buffer the heat.

I put mine on the upper rack, set the temp to 200F and use a smoke tube because I like a lot of smoke taste. Usually takes about 7-8 hours to get to 170F, then I wrap in pink paper, bump the temp to 225F and let it come up to 205F or so.
